So - some friends are having a "Battle Bacon" dinner this weekend, and I'm making something I'm calling Brunch Pudding. I'm making French Toast Bread Pudding (out of homemade Challah), adding crisp chopped bacon before cooking, and will serve with fresh strawberries and a maple-bourbon sauce. I'll let you all know how it goes, and will post the recipe if it's yummy - along with any other winners from the dinner.

Any favorite weird recipes involving bacon out there?

Yes...this cuisine-art is intrigueing. It did sound like a stellar idea. I would love to know how it turned out....still holding your tummy and moaning, perchance?

Someone posted a chocolate-bacon-stout cake recipe on this tribe a while back. Still haven't tried it though!

On a less sacriligeous note, I had some turkey bacon last night. It was quite excellent.

A smoky bacon with fig jam makes for a fantastic combo. Roll it up in some dough and bake or put on matzos for a very misguided passover

Ohh..that really does sound mouth-wateringly delicious. I am already devising a few variations of that. Fruit preserves of many different kinds would work. Filo dough...puff pastry...

I just had an artichoke that was stuffed with bacon and onions. The bacon was crisped in a pan, crumbled, and then sauteed with chopped onions. The mixture gets spooned into the center of a hot artichoke, that is split in half with the choke removed.

    Yummm..

Oh I must admit, my favorite way to cook with bacon is to actually saute my greens in the left over grease...I know, I know, this totally destroys the point of eating greens in the first place but who cares? It's DELICIOUS!

Note: I do not support keeping your bacon fat in a jar on your stovetop so you can use it days/weeks/[gasp!]months later. That's just damn gross.....

OK...start with crisping 5 strips of bacon.
Add chopped onions, then red pepper and 1 chopped zucchini and saute in bacon grease until onions are almost transparent and red peppers and zucchinis are soft, then add 3 cloves of chopped garlic, cook till soft. while cooking shred 1-2 medium carrots. remove onion/pepper/garlic combo from stove.
melt butter in skillet and add progresso bread crumbs per directions on package.

      mix in bowl
      1-2 eggs
      carrot shavings
      onion/garlic/pepper/zucchini combo
      5 strips of bacon(chopped)
      butter/breadcrumb combo
      salt to taste
      a little pepper

stuff in a small whole chicken or turkey(if you have alot)
this makes the best damn stuffing on planet earth
